Fastnacht with the Suite

Dear Friend,

Last night I came into our suite and was  surprised to see a sack of potatoes, a gallon of milk, and several other edibles on our dining room table. “Fastnacht Doughnuts!” exclaimed Morgan and Lenore… having had no previous experience with these celebratory desserts I wasn’t exactly sure what that meant, but I recognized the word “doughnut” and that was good enough for me. Apparently Fastnacht Doughnuts similar to the Polish, pączki, and are a traditional celebration of “Fastnacht Day” also know to the world as Fat Tuesday, Shrove Tuesday, Carnival, or Mardi Gras. This tradition traveled… or spread, rather… from Germany to the Pennsylvania Dutch community… go figure. Anyways, this lovely tradition is what brought 6 dozen pastries to life over the course of last night and this morning. To see/read more about the experience… check out this post from Morgan!

Kick-Ass Bars…

Dear Friend,

The summer before my Senior year of High school, my sister and I traveled to new York City for a week with our MYF (Mennonite Youth Fellowship… aka Youth Group). We spent the week working with various organizations, eating the most delicious ethnic foods, and walking… and then some more walking. By the second day I had blisters covering the bottom of my foot and ended up limping across the city for the rest of the week… but that isn’t really relevant to this story. On one occasion we were eating at the most amazing Indian restaurant I’ve ever eaten at (seriously, they had the best Saag Paneer I’ve ever had) when Lydia started talking about how she was really craving a Kickass bar. Obviously, we had no idea what she was talking about until she realized what she had said and corrected herself by amending her desired candy to a KitKat bar. But, so entertained with her idea of the Kickass bar, she and I took it upon ourselves to invent a truly Kick-Ass bar. She tried her own version… here is mine. And may I just say, it is pretty Kick-Ass.

Thoroughly mix:

1/2 c. Shortening

1/2 c. Butter

1 1/2 c. sugar

2 eggs

Sift the following together before adding

2 3/4 c. flour

2 tsp. Cream of Tartar

1 tsp. Baking Soda

1/4 tsp. salt

Split into 2 halves and spread each half onto a cookie sheet covering the majority of the sheet.

Bake @ 400 F for ~ 8-10 minutes until it is beginning to turn golden brown on the edges.

While the crust is cooling, melt White Chocolate Chips (12 oz./ cookie sheet)

When melted spread evenly over Crust

Then spread Nutella (~8 oz./ cookie sheet) over the white chocolate

Let sit in the fridge until served. Cut into bars and ENJOY!!!

Lemon Squares

Mix

½ cup softened butter

1 cup flour (all-purpose)

¼ cup powdered sugar

Press into an ungreased square pan (either 8×8 or 9×9)

Bake @ 350 for 20 minutes

While crust is baking

Beat together (until light and fluffy)

2 eggs

1 cup sugar

2 teaspoons lemon peel (optional)

2 tablespoon lemon juice

½ teaspoon baking powder

¼ teaspoon salt

Pour over hot crust and bake @ 350 for approximately 25 minutes (until no indentation remains when lightly touched in center.

Cool before serving
